Description : Healthy and good quality fruit plants are the foundation of successful fruit production. Farmers also generate income through nursery production in polyhouses of apple and apricot at Spiti Valley. The plants rise from seeds (seedling rootstock) and vegetatively (clonal rootstock). Seed Stratification is done after ripening seeds of crab apple, golden Delicious has good seed viability, germinability and seedling growth. After sowing the bed should be covered with the layer of soil and the hand weeding should be done to check the population of weeds. The seedlings are grown in nursery beds for one year. Rootstocks are vegetativaly propagated by stooling, layering and hardwood stem cuttings. Stooling is most popular method, the rootstock on the left has been cut back to grow shoots. These shoots and suckers are earthed up to encourage rooting at right.

Description : Wash core and slice the apple thinly. Now cut them into small bit. Add these into a mixing bowl and add the salt, chili powder. Mix well and set aside. In a small pan add the oil and when the oil heats up add the mustard seeds. As the mustard splutters aff the rest of the ingredients to the tempering and sauté till the curry leaves are crispy. Add this tempering to the prepared apple and toss well. Taste tests the pickle and adjust the salt levels. Wait for 20 minutes and you can use the pickle. To store use clean dry bottles and refrigerate. When needed remove using a clean dry spoon

Description : Boil 3cups of water in cooking vessels. Add 1 tsp of sugar to water after a boil and allow the sugar to dissolve. Add green peas to the water and boil them for 1.5 Min. turn off the flame and transfer the peas to a strainer to drain out water. Take a bowl of water with ice cubes and put green peas in the water. Keep them in cold water for 2-3 minutes. Strain the peas, spread them on cloth and wipe them to dry completely. You can also keep them under the fan for 15-20 min.Preparae masala for pickle heat a pan. Dry roast 1 tsp of dry coriander seeds,1 tsp of fennel seeds, 1 tsp of cumin seeds, 1 1tsp of fenugreek seeds,1tsp of carom seeds and 10-12 black pepper for 1to 15 mintues.add 1 tsp of mustard seeds and roast it for 15-20 seconds. Turn off the flame and grind the masala coarsely once cool down .Heat1/2 cup of cup of mustard oil in the pan till it smoke once hot, turn off the flame and allow it to cool slightly. Pour 2 tsp of vinegar into the pickle and mix well.

Description : Boil the mushroom in plenty of water to which juice of 1 lemon is added. Drain and set aside. Heat mustard oil in a non-stick pan. Put garlic and ginger in a mixer jar and grind coarsely. Rough break dried red chilies and add to the oil. Add asafetida, mustard seeds and split mustard seeds and sauté till fragrant. Add coarsely ground garlic and ginger. Mix well and sauté for 2-3 min. add Kashmir red chili powder, mustard powder, fenugreek powder, turmeric powder and black salt and mix well, add tamarind paste and mix well. Add mushroom and mushroom and mix well and cook till mushroom get heated through. Cool and transfer into glass jar, close with a lid and set aside for 2-3 days

Farmers also generate income through nursery production in polyhouses of apple and apricot at Spiti Valley. The plants raise from seeds (seedling rootstock) and vegetatively (clonal rootstock). Seed Stratification is done after ripening seeds of crab apple, golden Delicious has good seed viability, germinability and seedling growth. After sowing the bed should be covered with the layer of soil and the hand weeding should be done to check the population of weeds. The seedlings are grown in nursery beds for one year. Rootstocks are vegetativaly propagated by stooling, layering and hardwood stem cuttings. Stooling is most popular method, the rootstock on the left has been cut back to grow shoots. These shoots and suckers are earthed up to encourage rooting at right.

Description : Sattu ladoo recipe-quick and easy sattu ladoo made from roasted barley flour, jiggery and ghee Ingredients • Sattu flour- 1 cup • Jaggery powder or grated jiggery-1/2 cup • Ghee- 3 tablespoon • Cardamom powder-1/4 teaspoon • Almond,cashneut, raisins- 1cup Heat 1 tablespoon ghee in a kadai or pan. Then add 1 heaped cup sattu flour. Mix the flour with the ghee and begin to roast sattu flour on a low flame and stir often while roasting. The sattu just needs to be lightly roasted. Roast sattu for 2 minutes on a low flame. Remove in a separate bowl. Add ½ cup jiggery powder and also add grated jaggery .Even powdered sugar can be used. Add ¼ teaspoon cardamom powder.mix very well. Then add 2 tablespoon ghee. The ghee can be at room temperature. Begin to mix very well.

Description : Sattu ladoo recipe-quick and easy sattu ladoo made from roasted barley flour, jiggery and ghee Ingredients • Sattu flour- 1 cup • Jaggery powder or grated jiggery-1/2 cup • Ghee- 3 tablespoon • Cardamom powder-1/4 teaspoon • Almond,cashneut, raisins- 1cup Heat 1 tablespoon ghee in a kadai or pan. Then add 1 heaped cup sattu flour. Mix the flour with the ghee and begin to roast sattu flour on a low flame and stir often while roasting. The sattu just needs to be lightly roasted. Roast sattu for 2 minutes on a low flame. Remove in a separate bowl. Add ½ cup jiggery powder and also add grated jaggery .Even powdered sugar can be used. Add ¼ teaspoon cardamom powder.mix very well. Then add 2 tablespoon ghee. The ghee can be at room temperature. Begin to mix very well.

Description : Training and pruning is one of the important practices in apple fruit production for better yield and quality fruit production. Pruning is done with a view to giving desired shape to a tree during early growing years and is termed as training. Even after proper training, the yearly pruning of bearing trees is quite important so that it could support a full crop of large and colored fruits during the subsequent bearing period. Standard trees trained according to modified leader system. A leader develops on the young tree until it reaches the height of 2-3 m when the growth is restricted. The plant is pruned 60-90cm above ground immediately after planting and in dwarf trees spindle bush, dwarf pyramids, head and spread foe central leader tree is also adopted for moderate and ultra high density plantings. Spindle bush is found most suitable method. In this case one year old apple plants are cut back to a bud about 60cm above the ground.

Description : The decline of productivity and health of the tress may be due to faulty management i.e. unsuitable site and climate, inadequate nutrition, improper planting, incidence insect pest and biotic and abiotic stresses. The branches of tress start die from top to downwards directions it result poor quality fruits. Apple trees require constant care and attention throughout their lives for successful fruit production. As the tree grow old, their care and attention has to be proportionately increased in order to continue to get good yields from them. Without such care apple trees can become unproductive and economically poor. Thus every effort should be made to rejuvenate old (treatment of spur, treatment of water shoots, replacement of leader, corrective pruning) and neglected trees in order to restore their productive potential. However, it must be noted that every tree cannot be rejuvenated.

The plant is pruned 60-90cm above ground immediately after planting and in dwarf trees spindle bush, dwarf pyramids, head and spread foe central leader tree is also adopted for moderate and ultra high density plantings. Spindle bush is found most suitable method. In this case one year old apple plants are cut back to a bud about 60cm above the ground.

The plants raise from seeds (seedling rootstock) and vegetatively (clonal rootstock). Seed Stratification is done after ripening seeds of crab apple, golden Delicious has good seed viability, germinability and seedling growth. After sowing the bed should be covered with the layer of soil and the hand weeding should be done to check the population of weeds. The seedlings are grown in nursery beds for one year. Rootstocks are vegetativaly propagated by stooling, layering and hardwood stem cuttings. Stooling is most popular method, the rootstock on the left has been cut back to grow shoots.

Description : Management of young apple plant orchard is very important for higher yield production and quality improvement. The tree growth, yield and fruit quality is greatly influenced by orchard management practices like soil management (mulching, intercropping etc), nutrient management, irrigation and weed management. The most suitable system of orchard management for a particular area however depends on type of soil, amount of precipitation, topography and planting system. Proper soil management is very important for conservation of soil moisture and microorganism. Aeration of the soil, regular replenishment of nutrient and build up of organic matter and maintaining ideal pH levels required for apple plants. Apple fruit trees need different nutrients in varying quantities, proper irrigation at frequent intervals however, heavy irrigation should be avoided as stagnation of water in their basins may do more harm than good.

Description : Healthy and good quality fruit plants are the foundation of successful fruit production. Farmers also generate income through nursery production of apple and apricot at Spiti Valley. The plants raise from seeds (seedling rootstock) and vegetatively (clonal rootstock). Seed Stratification is done after ripening seeds of crab apple, golden Delicious has good seed viability, germinability and seedling growth. After sowing the bed should be covered with the layer of soil and the hand weeding should be done to check the population of weeds. The seedlings are grown in nursery beds for one year. Rootstocks are vegetativaly propagated by stooling, layering and hardwood stem cuttings. Stooling is most popular method, the rootstock on the left has been cut back to grow shoots. These shoots and suckers are earthed up to encourage rooting at right. The rooted shoots are removed in winter and stock again cut, as at left. Fruit nursery has to be kept free of insect-pest and disease by regulate spray

Description : Poor pollination management is a main problem in Spiti Valley. Farmers are not fully aware about proper layout and pollination management techniques. For Delicious group 20-25 % pollinizer are adequate for getting a commercial yield. Their proportion can be increased 30-55% if climatic conditions are not favourable. To bring cross pollination or if an orchard has insufficient pollinizer or they are not well spread out some trees of the main varieties can be top worked or graft with suitable pollinizer.

Description : Canopy management of young apple plant orchard is very important for higher yield production and quality improvement. The tree growth, yield and fruit quality is greatly influenced by orchard management practices like soil management (mulching, intercropping etc), nutrient management, irrigation and weed management. The most suitable system of orchard management for a particular area however depends on type of soil, amount of precipitation, topography and planting system. Proper soil management is very important for conservation of soil moisture and microorganism. Aeration of the soil, regular replenishment of nutrient and build up of organic matter and maintaining ideal pH levels required for apple plants and the placement of honeybees is highly beneficial to increase yield in the orchard lacking in proper proportion of pollinizer.

In Spiti valley grafting and budding, the rootstocks are grafted with desired scion variety during March –April. The intensity of fruit color and flavour are influenced favorably. Most of the apple orchards in Spiti valley facing the improper pollination problem due to less than 10 per cent against recommendation of 33 per cent. In the existing orchard i.e. was not possible to refill pollinizing cultivars due to space and poor growth problems. Therefore, top working with new and suitable cultivars was found to be the best alternative to overcome fruit set problem and enhance yield of quality fruits.
